if it my fish i prefer cherry cause i like more of a sweet smoked fish than smoky and salty

Generall speaking, chips from fruit trees are best for smoking salmon ie. cherry, apple, etc.

Anything but Alder unless you like the taste of creosote.

I use cherry, apple, maple and sometimes I even mix in some alder.

I use Alder for the inherent curing properties. Something to do with the Tannins? I don't know exactly but I prefer the stronger/smoke flavour.

1/2 Apple 1/2 Alder. My standard mix. Very velvety taste  ;)
