When you say 'burn'...is that when you use too much cure on the eggs? During my first attempts some eggs have looked a Little dry in places. Appreciate any help.

I don't think you can burn them from pro cure unless you use too much monster bite or something like that.  Here's what I have been doing for years that seems to work pretty good:
1) bleed your fish immediately
2) Put roe in plastic bag and keep cool until you can put in cure
3) butterfly roe, take out all traces of blood and cut into card deck size chunks.  (make sure each chunk has a good piece of the skein attached)
4) layer in jar with lots of cure of your choice and put in fridge
5) turn jar every few hours for about 24 hours
6) lay out roe on newspaper in cool place to dry to your preferred hardness
7) cut into fishable chunks and put into storage container with borax for ease of handling.
8) put onto baitloop, cast out into favorite pool, hang on.

BTW, your roe doesn't look that bad except for some of the darker ones that look like they have some blood in them, but can't tell because of the picture.  good job.

yah you can burn eggs......it depends on the commerical cure you use.....cures like pro-cure can burn eggs (if you use too much)...bentrod is right certain chemical additives will burn eggs so be careful.....however, while brands such as pautzkes, last super or wizard cure doesnt burn the eggs

Those things are not even close to being overdry!   ???  They are still wet. Hence the moisture on the paper towels!!

Britguy,
I lost my DL for six months so hooking up on the river will be tough. Have a few good fishing buddies who;ll pick me though! I'll still be out there somewhere!
Four months to go!

lol the moisture on the towel looks like it is from the pro-cure juice??? ;) I know when I first started out I would let the skeins dry out to much before putting any cure on them. As a result after you apply the "cure" the outer eggs become hard and have a different colour.
