Rodney's "No Longer Sticky and Tricky" Roe Cure

I've used Rodney's "No Longer Sticky and Tricky" recipe for curing roe a few times before.
This time, I ran out of Procure, so I used some Pautzke Borax'O'Fire.

I've had the skeins out on the drying racks for 24 hours now.  They are still not dry.
What is going on?  In the past, when using Procure, the skeins have dried in no longer than 12 hours.

I guess I'll just leave them out on the drying rack.
Any input?

yes. leave them drying until they get to what you want. I've left some for 2 days once.

Do you have a fan on it???

I use a fan to get the outside dry (like candy) but soft in the middle

its the warm temperature you are dealing with... the cooler the better for curing roe... odds are the roe will be jam... next bacth try to to in a very cool location or in the evening....

The roe seems perfect.  Its just a tad too wet still.
I was just a little concerned because its taking so long to dry.
I've used the method outlined in Rodney's article several times before.
Usually the roe was dry within 12 hours.  We're at about 28 hours already.

I will get a fan going and hopefully speed up the process.
I've tried to avoid using a fan as I find it dries the outside much faster than the rest.

I like to slow dry my roe in the fridge , especially if the weather is warm. I just wrap it in paper towel and leave it for at least a few days. If your dealing with really gooey roe you may need to pre-dry it a bit on racks or replace the paper towel a few times. I like this method because it is very difficult to over dry your roe. There is nothing worse than forgetting a batch of roe on racks only to find rock hard lumps of egg jerky :o

Use sprinkle some borax on them and they should be fine.

you put too much on.
just pepper it on, very little.
wait 1/2hour then put it in borax.


I always use Pautzke, because it dosn't stain.

The roe is now perfectly dry and appears to be pretty good.
The only problem is the the skein membrane is extremely dry.
The eggs look and feel good.
36 hours total on the drying racks. 

I think the extended drying period has something to do with the Pautzke borax'O'fire.
I've used the exact method in the past except with procure.  Never took longer than 15 hrs to dry.

I've also noticed something else very strange with the Pautzke product in the past.
The roe does not freeze solid.  Pull it out of the freezer and it is cold and slightly frozen, but
still very managable.

I just cured 4 large Ziploc bags full of roe today and filled 2 bags with regular Borax and 2 bags with Glo pink and blood red mix. When I dry the roe before I put them in the Borax I let them sit on wood planks covered in News Paper and give them a thin dusting of of regular Borax for a few hours. After they have dried to my liking I rinse and pat dry then mix in the Borax.

I dont air dry my roe.  I basically cut the roe into bait size pieces and place in a bucket.  Then  sprinkle pro cure and mix well.  I then let it sit for about an hour in the cure, stirring occasionaly and then dump into a strainer.  I only strain to get rid of the bulk of the liquid.  I then put into a large bag filled with borax and shake the bag until the roe is covered in the borax.  This will absorb most of the remaining liquid.  Then pick out the pieces and shake off the excess borax and store in ziplocks with fresh borax.  This whole procedure is complete in about 90 minutes. 

The final product is dry, soft and supple piece of roe that milks well.

I find that using a wet brine results in a much more durable final product while retaining good milking.
The only dry cure that even comes close in durability, is one I've found that uses Knox Gelatin.
