Winter fishing vacation suggestions?

I have vacation the second week of January. I'm thinking something like this...haha:

Anyone been tarpon (baby) fishing? From my cursory research it seems Mexico or Belize. Is it possible to do it for around $1500 not including airfare? I'm pretty accustomed to independent travel.

What would be cheaper, to book down there or before you leave?

I'd like to use my 8 wt. And I'm a new caster, probably be able to get out 50-60...maybe 70 ft with a not so delicate presentation. Would this be a problem?

belize is awesome.  :D flats fishing is fun as hell, super challenging and will frustrate you beyond belief. especially if your a new caster.

the best part is the same spooky fish during the day are oblivious at night and bait fishing with conch is spectacular. seriously lights out. barbless 1/0 hook and a couple of split shots.

if you have any ability to move your trip around a few days, try to plan around a new moon. literally the most under rated detail. the difference in fishing between moons blew me away.
