Nutty Honey Mustard Salmon

Here's a recipe that I've been making for some time now. Simple, but delicious... give it a try and let me know how you like it. It's one of my favorites...   ;)

You can make it in the oven, or on the barbacue (tastes great).

~Jake's Salmon~

Yield: 6 fillets

3 tablespoons Dijon mustard
3 tablespoons Butter, melted
5 teaspoons Honey
1/2 cup fresh Bread Crumbs
1/2 cup Pecans, finely chopped
3 teaspoons fresh Parsley, chopped
6 (4 ounce) Salmon Fillets
Salt and Pepper to taste
6 lemon wedges


Method:

1. Preheat the oven to 400˚F. In a small bowl, mix together the mustard, butter, and honey. In another bowl, mix together the bread crumbs, pecans, and parsley.
 
2. Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture.
 
3. Bake for 10 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. Serve garnished with lemon wedges.

Ooh, that sounds goooood!  :D

I love dijon mustard and honey. I guess Rodney and I will have to give it a go this summer, that is if he ever catches a fish  ;D

No problem Nina, hope it turns out good for you. I noticed that the honey-mustard combination is well liked by many fellow Europeans. But you never know, everyone has a different palette.  ;)
