smokeing question

hey can any one help me i need to know if I can leave fish that I have brined and was just about to put in the smoker and now have to go out for a day or two will it be OK to put it in the fridge in zip lock bags.

there is absolutely nothing wrong with leaving it in the brine for a few days, sometimes I have left mine in the brine for a week before smoking it and if anything it turns out better !!

I do most fish for 2 days....................... pinks 2 weeks  8). If your concerned just make sure the fridge is set to a colder setting than usual.

If you are concerned about it being too salty you can "freshen" it in repeated fresh water baths leaving it  in the fresh water for about half an hour then rinsing it off and changing the water, or I just blast it with a hose then leave the hose running in the container with the fish for an hour or so.
