Hey guys, can I freeze pink roe and cure it at a later date? Just a newbie trying to learn Thanks

NO, Its pretty much a must to cure it now then freeze it after, if you freeze un cured roe they will turn to mush and wont hold together very long

Go buy the EGG CURES book lots of info on cureing roe and lots of info on what not to do and what to do , or spend the time and search it on the net

Yes you can, as long as you make sure there is little or no air in the bag to eliminate freezer burn. Some eggs will get burned.
I've done it and defrosted it a year later and then boraxed it and people were complimenting on how good to roe was.

I completely disagree. I've done this for years and works out great. As long as you squeeze the air out or vacuum seal the eggs, everything will be just fine. This all depends on length of time that you keep it frozen. Like anything else, the longer it is frozen, the worse it gets.

Everything hinges on how well you freeze it and how long it is frozen for.

Everyone has there own ways, when it comes down to it if your catching fish then something must be right.

Just make sure you thaw it slowly in the fridge is your best bet to not turn the row too mushy.

But i freeze un-cured roe all the time for sturgeon and have not problems with it being mushy.

But the ice crystals form when freezing uncured roe can damage the roe. So the best cured roe is done before freezing, but somtimes, you just have no time, so i freeze it and thaw it in the fridge and do it later.

Salmon like that chemical burnt hot red mushy stuff anyway. When you cure it with some of the hot cures they come out mushy.

Everyone has there own special/secret mix.

simple, get some Pautzkie's fire cure, follow the directions, and it is money. As far as freezing, not ideal but I was lazy and did not want to cure up my spring roe from the Fraser so I froze it. Thaw it slowly and you will be fine
