Filet knives
« on: September 13, 2007, 04:30:47 PM »

Just bought a new filet knife today from CADcutlery.com.  It's a Forschner 10" Cimeter with a Granton edge. Got it for $48.95.  This is a screaming deal.  Still expensive for a filet knife, but it is apparently one of the best filet knives one can own.  The 12" is in last month's Salmon Trout and Steelheader magazine.  I was going to get that one, but I wanted a little smaller blade for coho and steelhead.  I'll post a review on it as soon as I get it bloody.

Couldn't find the one you bought on the site but they do have some very solid looking products I know many guys swear by Forschner.

Good tools pay for themselves-the $50 you spent now will pay off many times over in future.

Good company.  I'm familiar with their products.  I have a Wustof Trident 8" fillet blade myself, but it's a bit small for the really big fish.  Now, make sure you either get yourself a really good waterstone for sharpening it.

I was given a knife this summer, and was on "cutting duty" for one of the final nights at the lodge, with all my other knives packed away, I decided to give it a shot, and it outperformed any other knife i've used, where i used to use 3 knives, I was down to using one.

given the "fish gripper" is a bit useless, there's a hook hone on the sheath which is useful. The blade is extendable, and can either be 6" or 9"

I was able to fully fillet halibut, coho, chinooks, rockfish successfully.

The knife showed up today.  I have Wusthof and Henckles and have used several more.  But, by far, this one is the sweetest piece of cutlery I own.  It's very well balanced and has a really sweet handle with a great blade design.  If you order one, go to CADCutlery.com.  Very fast shipping and a great guy to work with; not to mention the best prices around.

Lol I'm not sure if any of you ever seen the fishermen knife sold by Cutco. I worked there one summer during my college days and got one of those knives as a prize. Never found use for it till i fished more often.
