I do mine with a little salt, Pepper, Old Bay, lemon Juice, and then I coat it with a mix of crushed almonds and corn flakes.

I do a real quick fry in Very Very hot olive oil, and then put the whole pan into a oven on broil for another 12 minuets.

I then make a sauce from sweet chili sauce, and add just one or two drops of Worcestershire sauce, warm it up and driizzle over the Halibut.

YUM YUM!!!!!

Usually we just marinade ours in kraft Sundried Oregano dressing, then fry it on the bbq. It is the easiest and tastiest halibut recipe I have ever found.
You can add some lemon in there too.

O smokin halibut I tried that about 2 years ago I love halibut and I have smoked some very yummy salmon over the years I dunno if it was just me but when I smoked halibut it was so awful. I used my normal salmon brine and it did not do well, so if you gonna try smokin the might white meat id suggest doin a very small batch cause if you have my luck it will go straight in the garbage

Candy Halibut from St. Jeans Cannary is very good and worth a try..  I personally like my Halibut plain and simple, pan sear in butter with a light seasoned flour coat to lock the juice in.. Make sure you don't over cook them, they will turn into cardboard and you might as well feed it to the dog.

Italian or some form of oil/vinegar dressing works great and it's easy. Marinade in a pyrex dish and you can cook it in the same dish that you marinade in. Bake, broil, or barbeque after marinading for 4hrs minimum. Don't over cook.

Smoked halibut can be dry. If you pour marinade over the smoking fish it will come out great. Use cherry wood with a hickory finish. Not much brown sugar but lots of peppercorns, onions, and garlic. Dry rubs work if you let the rub set first and then marinade the fish while smoking.

Hey James,
If you like a Thai flavour, I've got a good one for you.
I mix 2 tbsps of Green Thai curry paste, breadcrumbs, ground almonds, 1/2 tsp sesame oil and finally a little shredded lime rind. Pack this onto the fillets and bake in the oven.....mmmmmm. I think I need to go take out some halibut!
Good luck.
