Another boat that's more than capable is the Alumacraft. They make a 1036 that has good width and weighs in at 95lbs.

Punts are amazing for lake fishing.  To me, nothing beats them.  I'd rather fish out of the springbok 9footer we have than my pontoon boat ANY DAY on a lake...river, different story of course.  Something you might want to consider is putting some sort of padding on the floor so it doesnt bang around a lot.  Even when you're careful it's easy to make noise.
