Canning salmon

Hey I have a freezer full of salmon and would like to can some up. I have never done this before so it is totally new to me. I am wondering if I need to get a pressure cooker or is just a regular canning pot good enough? Also what is a good brine for the salmon and what do u guys put in the jars with the salmon?

You definitely need a pressure cooker. There are foodsafe guidelines as to what pressure salmon should be cooked at and for how long. Not following them could make you very sick and or cause your salmon to spoil. The result is excellent and canned fish will last for years.

I just put a little salt and a teaspoon of vinegar(breaks down the bones) in the jar along with a few black peppercorns. This leaves all sorts of options as to what you mix with it before putting it in a sandwich.

Last week I was wondering exactly the same thing. I found this video is very usefull to give you overall procedure and good safety practice.

Oh almost forgot, yes you can can salmon that was previously frozen.

Another question I'm looking to buy a pressure cooker and I see there is electric ones and stove top is there any difference between the two?

Get the largest stove top pressure cooker you can afford.
Some will tell you on the box how many jars it will hold.

Canned some coho and red spring up yesterday. It turned out really good! I know what I'm sending home for Christmas presents this year haha ;D
