Slice one medium Onion, finely chop one entire head of Garlic and sauté in oil.
When no longer translucent add 2 tablespoons Curry powder, stir and then add 1 can Coconut milk and 500ml of Buttermilk.
Simmer over low heat for 2 hours stirring occasionally 3 is better but watch that it isn't too dry-add more water if it is.
Add chunked Salmon with grey fatty part removed and raise heat monitoring carefully until Salmon chunks are cooked through.
Serve over Basmati rice-and add chopped Cilantro at the last minute.
The resultant Curry will be rich, a bit sweet and a bit tangy-perfect for Salmon.
I had this Tuesday and it was a huge hit as always.

Good recipie Sam.  Try this variation.
Add 1 Tbsp. Cumin.  Add sugar to taste after you add the coconut milk.  Also add 1tsp. Lime zest (that's lime skin grated small to you non cooks) or one whole lemon grass (remove before serving).  Serve as you suggested with bananas and cucumber slices on the side.

When you guy's are buying Coconut milk, don't cheep out.  Buy the Coconut milk that can be used for baking it's thicker (fattier too, but it's better).

Any salmon will do.  Try Yams or sweet potatoes in your curry.  They add a nice texture and sweetness.

Here is a recipe from the 'SpicySteve' website that looks pretty good ... saw him do it on his show and it looked wonderful.

Take care,
Peter

SALMON IN RED CURRY COCONUT SAUCE
This is an absolutely delicious dish that is both delicate and robust at the same time. The secret is making the red curry coconut sauce not too hot and accenting it with the kaffir lime leaves and lemon grass.

Ingredients:

1 lb salmon fillets cut into individual servings
1 Tbsp red curry paste
1 cup coconut milk (Mae Ploy brand is best)
1 tsp fish sauce
1 tsp brown sugar (to taste)
2 tsp vegetable oil
3-4 kaffir lime leaves, chopped finely
1 stalk lemon grass, bruised (pounded) and sliced coarsely
Thai basil leaves or coriander leaves for garnish or extra finely julienned
kaffir lime leaves

Method:

1. Heat oil and fry lemon grass for less than a minute or until very fragrant.
2. Blend in red curry paste, stirring to break it up until it is fragrant. Do not let it burn.
3. Stir in coconut milk until well blended and lower heat to simmer.
4. Stir in brown sugar and fish sauce and add kaffir lime leaves. Allow to simmer at least 15 to 20 minutes or until oil begins to separate.
5. Add salmon fillets and poach in sauce on medium heat until cooked.
6. Serve immediately.

I ate a lot of curried salmon's - OK, OK, I didn't cook them, but If you do not know what to do with a chum you kept, it is a great way to cook it. Many people are not fond of chum taste, but once mixed with curry paste, you do not feel it too much, and all that you want in your curry is a bit of meat, unless you are vegetarian. just my 2c
