Spring Jacks?

Seems to be an abundance of spring jacks this year or is that normal???  Are they good eating or more like whites?  Is there something special in targeting them or just normal roe or wool?  Dont know much about them?

Almost half of the spring jacks that I brought home this fal are marbled.  It's kind of weird.
