The Foodsaver sucks the air out of the plastic bags which allows you to store food without suffering the effects of freezer burns.

Yep we use a food saver for sealing all our sockeye and they last for about a year without freezer burn. The large vacuume sealers are called "Craovac" I think. Good luck

If it's just a vacume packing machine, it shoudl keep fish for up to a year, my parents just at some of the salmon that I caught last summer. They had some friends over who kept on asking when the salmon was caught this week, suprised them by saying last August.

A used commercial quality vacuum packer will run you 2-3 large-a lotta dough for a few Salmon.

The best deals to be had  are from http://www.wellscan.ca/ which is in Burnaby-they have the best prices for quality goods-smokers as well.

I've been using Tilia's Professional II model for three years now. Fresh, smoked, fillet or whole, it does an outstanding job with fish (as well as a whole host of other things). They're not too pricey ~ about $300.00 for that model, and well worth it!! Fish will last a year no problem. Don't go with the cheaper models as several of my firends have found out - most don't make through the warrenty.

Cheers,
Nog
